Pyrazolobenzotriazinones Derivatives as COX Inhibitors: Synthesis Biological Activity and Molecular Modeling Studies

Pyrazolylbenzotriazinones are endowed with structural analogy with the COX-2 selective inhibitor celecoxib. Considering that our research group has long been interested in the 3-pyrazolyl-substituted benzotriazinones as anti-inflammatory agents, six new pyrazolylbenzotriazinone derivatives 16a-c and 18a-c have been prepared by reacting the opportune ethyl 5-(2-aminobenzamido)-1-(pyridin-2-yl)-1H-pyrazole-4-carboxylate or 5-(2-aminobenzamido)-1-(pyridin-2-yl)-1H-pyrazole-4-carboxyic acid with sodium nitrite in glacial acetic acid. Importance of Sodium Nitrate in the Maturation Process of Gouda Cheese

The aim of this study was to observe the dynamics of sodium nitrate during ripening, in was introduced in different amounts in the recipe. Sodium nitrate is the chemical compound also known as Chile saltpeter or Peru saltpeter, is used as an ingredient as a food preservative. Sodium nitrate should not be confused with the related compound, sodium nitrite. Sodium nitrate in the cheese gives a longer time of preservation (Moore J.C., 2010).

Role of sodium nitrite on phospholipid composition of cooked cured ham. Relation to its flavor

Abstract The role of sodium nitrite on phospholipid composition was studied during the processing of cooked cured ham. Evolution of the different classes of phospholipids in raw meat, cured meat with brine injected at 0, 50 and 100 mg of sodium nitrite/kg meat, and cooked meat, was determined as well as fatty acid content of phosphatidyl choline and phosphatidyl ethanolamine in raw and cooked meat. The major effect of sodium nitrite was observed on phosphatidyl ethanolamine whose content was significantly lowered in the presence of this salt. Electrochemical reduction of the nitrite to ammonium ions in presence of [MoO2(O2CC(S)C6H5)2]2−

Abstract Ammonia is formed during potentiostatic reduction of sodium nitrite solutions on the nafion-complex-coated electrode. When (NH4)2[MoO2(O2CC(S)(C6H5)2)2] is present in NaNO2 solutions a polarographic wave is associated to electrocatalytic reduction of nitrite ion. The wave height varies linearly on the concentration of nitrite ion, allowing a procedure for analysing this ion. This electrochemical behaviour distinguishes the nitrite from the nitrate ions. The Mo(VI), Mo(V), and Mo(IV) are involved in catalytic redox processes determining formation of NH4+ from nitrite ions.
